The Willow Stream Spa is an experience onto itself. With a booked service, in my case, a stress relief massage, the infrared sauna, steam room, outdoor hot tubs, fitness center and relaxation lounges are all included and make for a blissful way to pamper and prepare for an evening of wining and dining at Botanist followed by libations and live music in the lobby lounge.

The main restaurant, Botanist, is an indoor garden oasis with artistic flair and fantastic fine dining. Under the direction of Chef Hector Laguna and Head Sommelier Matthew Jacobson, this establishment is an ode to the Pacific Northwest and all that it produces from the land to the sea, presented with panache and technical excellence. The chef’s creative global inspiration, evident in each dish, is viticulturally matched by the exciting and thoroughly unexpected pairings from the worldwide wine regions represented in his eclectic wine list. It is an education and a pleasure just to learn about the suggested wine selections, not to mention tasting them.

Among the highlights we enjoyed was the Black Pepper Crusted King Salmon set in a sauce of smoked buttermilk, salmon roe, kohlrabi and summer squash.

Among the many wines tasted, the Chateau Margaux, Margaux de Margaux, Margaux Bordeaux, 2017 and the Mission Hill Estate Reisling Icewine, Okanagan Valley, BC, 2017 were exceptional standouts.

Without question, the Fairmont Pacific Rim is reason enough to make a trip to Vancouver and while in the area, and if time permits, take a day trip to visit Victoria and the world famous Butchart Gardens, renowned as one of the premier display gardens of the world and enjoy tea at the Pendry Inn and Tea House where high tea is a culinary art.
